Well, that’s a lot of cake and I have to say that every time the word cake is mentioned, it triggers a need for cake that isn’t healthy…

So, what about favorite cakes?
I like a good old school sponge with lemon icing or a carrot cake. Not a fan of those mousse-y creamy ones. Also, there’s a fundamental and delicate sponge-to-filling/frosting ratio, many cake makers go overboard and they can be overwhelming.
Worthy mention: lemon meringue
