Does anyone know of a more automatic way to convert two spherical images to make a single lat-long?
I usually treat each half separately. Use Map Convert to go from 180 spherical to lat-long and then combine the two.

Nuke spherical transform. Not in front of it now, but you may have to split each picture, unwrap half of the latlong for each and stitch back
